In 1940, Oscar and Edith Quintal arrived in Warrensburg, NY with little more than a dream. Three years later, they opened their first smokehouse inside the town's Music Hall — handcrafting smoked meats slowly, deliberately, and with pride. When fire tore through the Music Hall in 1945, the Quintals refused to walk away. They rebuilt from nothing and reopened at their current location in 1946. This time, for good.

Oscar built the original brick smokehouse by hand in 1946. For more than six decades, those same walls produced the bold, unmistakable flavors our customers came to love. Then on Labor Day weekend 2009, a second fire destroyed the building. Once again, the family refused to quit. By February 2010, a new 9,000 sq. ft. facility rose from the ashes — complete with geo-thermal heating and energy-efficient construction. The tools changed. The recipes never did.

A NAME THAT TRAVELS
Oscar's has grown far beyond Warrensburg. Through mail order and national wholesale accounts, our reputation has spread across the country — almost entirely by word of mouth. Today, Oscar's produces 159 products right here on-premises, from classic smoked hams and hickory-cured bacons to lower-salt options and a wide variety of chicken sausages. There's something for everyone, made exactly the way Oscar intended.

Oscar and Edith Quintal settle in the Adirondacks with a vision.
1943
Smokehouse Opens
The original Oscar's Smoke House opens inside Warrensburg's Music Hall.
1945
The First Fire
A devastating fire destroys the Music Hall. The Quintals refuse to give up.
1946
Rebuilt & Reopened
Oscar builds a new brick smokehouse by hand at the current location.
2009
Labor Day Fire
A second fire destroys the building over Labor Day weekend.
2010
Born Again
A new 9,000 sq. ft. facility opens in February, stronger than ever.
